Herby Sausage Casserole
Serves: 4 people
Prep time 10mins Cooking time 45mins
Ingredients
130g diced bacon
1 onion, peeled and sliced
454g pack herby Lincolnshire sausages
1/2 litre beef gravy
410g can baked beans, drained
400g can chopped tomatoes
2 tbsp fresh parsley, roughly chopped
seasoning
Method
Preheat the oven to 220C, 425F, gas mark 7.
Warm a heavy based pan over a moderate heat and gently fry the bakon bits for two minutes.
Add the onion and continue to cook gently with as little colouring as possible.
Heat a large frying pan and brown the sausages on all sides, remove them from the pan.
Allow to cool and then cut in half widthways.
Add the gravy, beans, tomatoes and herbs to the casserole mixture then bring to the boil.
Stir in the sausages, cover with a lid and reduce the heat, cook gently for 40 minutes
Serve with loads of mashed potatoes.
