I always take a few expanders with me and have used all sizes 2mm to 8mm of the pro expanders without problem. My preparation method is to put a glass of water in the fridge overnight, then when having breakfast add the water (at least 4x volume of pellets) to the pellets seal the tub and they are perfect in a couple of hours. I do think the chilled water makes a better pellet (started after watching Andy Finlay video).

How do the fish know a pellet is soft or hard until they have it in their mouths?

Cos they is clever! Actually, I suspect that on occasions they will just feel it with their lips, perhaps not intending to eat the bait at all, but more out of instinct. That could be when they are hooked on the outside of the lips.

I have actually seen a rudd balance a maggot on its nose and swim off with it like that.

But as I wrote, we don't know everything.
