Here's a simple Sweet & Sour Chicken recipe that I use:
Ingredients:
4 boneless chicken breasts, skinned and diced into 2cm-ish cubes
1 tin chopped tomatoes
1 tin pineapple chunks, drained
2 bell peppers - 1 red 1 green diced into 2cm chunks
2-3 tablespoons brown sugar or demerara sugar
2-3 tablespoons white wine vinegar
Method:
Empty the tomatoes into a saucepan and heat gently
Add the sugar and vinegar and stir well
Add the peppers and pineapple chunks
Cover and simmer.
Taste occasionally and add a little more sugar or vinegar if it is too sour or
sweet.
Heat a little oil in a wok or deep frying pan and brown the chicken.
Spoon out and discard any excess liquid from the chicken pan then add the sauce
from the other pan.
Cover and simmer again while you cook rice, spuds or chips or whatever you're
having with it.
