Maggots in a fridge

At this time of year my maggots are kept in the shed in a washing up bowl so they have freedom to move around rather than kept in a bait box.
They are covered with maize then riddled before I go fishing, never had any escapees.
Sometimes I put some raw meat offcuts in there to keep them feeding and plump.
Aren't they already, for one of a better term, fully grown by the time you buy them?

If there's not too many maggots in a box then I don't think sweating is the problem, more like to be condensation forming in the fridge and the sides of the maggot box. Best to keep a lid on them.
