Here's a simple Sweet & Sour Chicken recipe that I use:

Ingredients:
4 boneless chicken breasts, skinned and diced into 2cm-ish cubes
1 tin chopped tomatoes
1 tin pineapple chunks, drained
2 bell peppers - 1 red 1 green diced into 2cm chunks
2-3 tablespoons brown sugar or demerara sugar
2-3 tablespoons white wine vinegar

Method:
Empty the tomatoes into a saucepan and heat gently
Add the sugar and vinegar and stir well
Add the peppers and pineapple chunks
Cover and simmer.

Taste occasionally and add a little more sugar or vinegar if it is too sour or
sweet.

Heat a little oil in a wok or deep frying pan and brown the chicken.
Spoon out and discard any excess liquid from the chicken pan then add the sauce
from the other pan.
Cover and simmer again while you cook rice, spuds or chips or whatever you're
having with it.

Red potatoes make the best jacket tatties. Don’t bother buying. Baking potatoes just buy Red Roosters. Microwave for 10 mins then pop in oven. Top snack

Might try that one but changing a couple of things, like stevia instead of sugar, just need to find something to replace the pineapple.
Going keto can be quite awkward

Sugar free Sweet and Sour.
Might use yellow peppers like in this recipe instead of pineapple in the sweet and sour chicken recipe above.

Spicy chicken... serves 2
Ginger
Paprika
Garlic
Salt
Pepper
Honey
Olive oil
Lime juice
Mix them all together in a tub
Add 4 chopped chicken thighs and coat them in the mix... leave them to soak in the marinade overnight or at least 4 hours...
Pour the lot into a hot wok and fry till cooked thoroughly
Serve with
Rice
Peas
Sweetcorn
Onions
Mushrooms

Enjoy

Eggy crumpets....

Beat 1 or 2 eggs in a bowl
Put crumpets in to soak up the egg
Shallow fry crumpets
Serve topped with grilled smoked streaky bacon
Smother with maple syrup

Very very nice !

Muskrat ..... You're a star. Tried your meal tonight and it was really lovely. I substituted the oil for light soya sauce but, other than that I followed your recipe to the letter. I placed the meal on a bed of slightly salted rice. Trouble is .... I've stuffed myself now. 😆 What a lovely clean tasty meal that was. Definitely having that meal again. Thank you for sharing that with us all. 👍

PS.... Its earnt me loads of brownie points / fishing tokens has that. 👍

Chip some spuds, two eggs, tin of beans, add some bread and butter on the side.

I'm glad you liked it. (I usually have to drop a belt notch or two afterwards too! :) )

A very simple and yummy pud.

Lemon Posset
Prep time:10 min
Cook time:5 min, plus 3 hours chilling time
Serves:4-6
Ingredients
  • 600ml double cream
  • 140g caster sugar
  • 2 large lemons, juice (and grated zest)
To serve:
  • 1 large lemon, pared zest only
Method
1. Put the double cream in a large pan with the sugar. Bring slowly to the boil and simmer for 3 minutes. Take it off the heat, add the lemon juice and zest and whisk well.

2. Pour into 6 ramekins and refrigerate for 2-3 hours. Sprinkle with the pared lemon zest before serving.
